We love a well balanced healthy muffin! We love to make these muffins with the addition of protein, as it balances the nutritional content and keeps us full and fueled for the day and activities ahead! Recipe:
*3/4 cup almond flour
*3/4 cup vanilla protein powder
*1 TBSP chia seeds
*1 tsp baking powder
*1 tsp cinnamon
*1/2 tsp salt
*2 bananas, mashed
*1/2 cup unsweetened almond milk
*2 TBSP applesauce
*2 TBSP maple syrup
*1 tsp vanilla extract
*1/2 cup add-ins: fresh blueberries, chocolate chips, chopped nut, dried fruit, etc.
DIRECTIONS:
1.Preheat the oven to 350 degrees F and spray a 12 tin muffin tin with cooking spray.
2.In a large bowl, combine all the dry ingredients (almond flour, protein powder, chia seeds, baking powder, cinnamon, and salt) and stir to fully combine the ingredients.
3.In another bowl, combine all the wet ingredients (mashed bananas, almond milk, applesauce, maple syrup, and vanilla extract) and stir to fully combine.
4.Next, add the wet ingredients the to dry ingredients and mix well to fully incorporate everything together. Once combined add the mix-ins of choice and again mix everything together.
5.Now spoon and evenly distribute the muffin batter in the prepared muffin tin. Bake for 20-25 minutes until done, or when a toothpick inserted comes out clean.
6.Take out of the oven and let cool. Store in an airtight container and enjoy when ready to eat! ENJOY!
